Propuesta de economía circular para la gestión de residuos de café en cafeterías de la ciudad de Lima en Perú
Resumen
El procesamiento del café para el consumo en cafeterías genera importantes cantidades de residuos, principalmente, cascarillas de café que, al ser tostadas, molidas y pasadas por las máquinas cafeteras, generan café gastado. Entonces, el problema es que no se cuenta con una adecuada gestión de dichos residuos ni son cuantificados; por ello, en este artículo se busca identificar alternativas de solución frente a tal problemática. Este estudio tiene un alcance exploratorio, para lo cual se utiliza una encuesta con una muestra obtenida por conveniencia de 18 cafeterías, de los cuales se obtuvo información sobre el interés de participar en un modelo de recolección de residuos de café. Asimismo, se utilizó un modelo de conglomerados para identificar la mejor manera de recolectar los residuos, para ello se determinó la ubicación de 72 cafeterías en la zona de estudio. Como resultado, se concluye que existe interés en la reutilización del café gastado aplicando un adecuado modelo de recojo de residuos por conglomerados.
